2020 Lyons Will Estate Pinot Noir
Our production for this vintage was just under 1 tonne per acre, a final production of approx. 120 cases. Picked on the 8th of April, the fruit was 1 fermented as 10% whole bunch and the remainder destemmed and placed in open vats to cold soak for 4-5 days and then naturally fermented in open vats. The fruit was then basket pressed and transferred into French oak barrels. 20% of the wine spent it's time in new barriques and the remaining placed in 2-4 year old barrels. This wine has not been fined or filtered and is 100% produced by Lyons Will Estate.
