Our production for this vintage was just under 1.5 tonnes per acre, a final production of approx. 400 cases. Picked on the 18th to the 26th of March, the fruit was destemmed (20% whole bunch) and placed in open vats to cold soak for 4-5 days. Grapes were then wild fermented in open vats, basket pressed and transferred into French oak barrels. 20% of the wine spent it's time in new barriques and the remaining placed in 2-4 year old barrels. This wine has not been fined or filtered and is 100% produced by Lyons Will Estate.
