Our debut vintage were handpicked from young vines on the 14th April 2017. Two thirds of the fruit was destemmed, placed in open vas and cold soaked for 5 days prior to fermentation. The remaining fruit underwent semi-carbonic maceration, 100% whole bunch. The fruit was then basket pressed and transferred into old oak barrels to mature for 10 months. This wine is unfiltered and unfined.
