Our second vintage from these young vines. Handpicked from young vines on the 21st March 2018. 60% of the fruit was destemmed, placed in open vats and cold soaked for 5 days prior to fermentation. The remaining fruit underwent semi-carbonic maceration, 100% whole bunch. The fruit was then basket pressed and transferred into old oak barrels to mature for 10 months. This wine is unfiltered and unfined.
Our production for this vintage was just over 1.1 tonnes per acre resulting in a limited production.
