2025 Lyons Will Estate Élevage Riesling
Handpicked on the 3 April 2025. The fruit was destemmed and left on skins for 18 hours before being pressed into old french barriques. This is a unique take on how we do Riesling and perhaps a bit “off piste”. For this wine, we keep back a few barrels to let them mature for 9 months in old oak on lees and allow them to go through full malolactic fermentation. This wine is fined and gently filtered prior to bottling. This is for the Riesling lover as it is all about texture and depth of flavour. Vegan.
