Handpicked from young vines on the 11th of April 2021. Bunches affected by botrytis were selected for and 50% destemmed. The fruit sat on skins for 4 - 6 hours before basket pressing, settled overnight and moved into old French oak to ferment. The wine spent three months in old French oak to build before it was bottled.
Only one barrel of this very exclusive wine was made.
